Organic farming commits itself to a number of substantial values, and thereby it sets itself apart from conventional farming. In general, conventional large-scale intensive farming only commits itself to producing what the market demands. The market is, of course, regulated by national and international legislation. Within the limits set by legislation, international competition leaves very limited freedom of action for producers. The global principles of organic agriculture were designed to represent the overarching values of organic groups around the world. Similarly, basic organic standards were intended to provide a common language for cross-cultural agreement on the production of organic products. Providing assurances to consumers on the adherence to certain animal welfare-related standards is an important element of organic and farm assurance schemes. This project has ensured that preliminary welfare assessment protocols developed in a conventional farm assurance system (RSPCA Freedom Food scheme) are available for incorporation into organic (& conventional) certification schemes. Using a double hurdle model on panel data from 3200 Danish households (monthly observations for 2002-2007) we study the effects of media information about pesticides and information that link health and consumption of organic foods and information on demand for organic fruits and vegetables. We find that ‘negative’ information about pesticides contained in conventional fruits and vegetables influences the probability of a consumer entering the organic market while ‘positive’ information that link health and consumption of organic foods influences the quantities consumed by households that are already active on the organic market. The present study investigates the relationships between consumer categorization of organic versus non-organic food products, consumers' underlying perceptions of organic food, and their propensity to consume organic foods. A choice experiment is used to test these relations in a case study involving consumer preferences for attributes relating to milk. First and foremost, we find a strong link between how consumers categorize food and their organic profile. Second, we find that knowledge concerning a claim stating that milk from grazing cows is healthier, serves as a way to categorize consumers according to their organic profile. On 24 June 1991, the Council of the European Union adopted Regulation (EEC) No 2092/91 on organic production of agricultural products and indications referring thereto on agricultural products and foodstuffs. As well as defining the required method of production of crops and livestock they also regulate labelling, processing, marketing, import and inspection. The research project iPOPY compares and analyses procedures for certification of food-serving outlets within its participating countries (Norway, Denmark, Finland and Italy) using Germany as a reference.
